If you struggle to make time for breakfast in the morning, you need to try these.

They are filled with all the good stuff – rolled oats, nuts, nourishing fats and sweetened with banana, honey and dried fruit. They are basically a bowl of muesli in cookie form. Have them as a quick breakfast as you leave the house or enjoy them as a filling snack throughout the day.

Breakfast cookie recipe

Ingredients

  • 1 egg
  • 1 banana, mashed
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 2 cups rolled oats
  • 1/3 cup plain flour
  • 1 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1 1/4 cup mix-ins (such as pecans, walnuts, dates, sultanas, seeds etc)
  • 30g dark chocolate (optional)

Directions

  1. Preheat oven to 170 degrees Celsius or 340 degrees Fahrenheit.
  2. Mix dry ingredients (oats, plain flour, cinnamon, baking soda and mix-ins) together in a large bowl.
  3. In a separate bowl mix the wet ingredients (egg, honey, olive oil, and mashed banana).
  4. Mix the wet ingredients into the dry ingredients and stir to combine. The mixture will be quite wet and sticky.
  5. Roll 1 tablespoon balls of mixture in your hand then place on a baking tray and gently press down. The mixture will not spread so be sure to shape the mixture before cooking.
  6. Bake for 15 minutes in the oven and let cool completely.
  7. Once cooled, melt the chocolate at 15 second intervals in the microwave, stirring in between. Once melted, drizzle over the cookies and let the chocolate set.
