Recipe: Satay Tofu Noodles

Delicious and creamy satay noodles. If you are new to tofu this is a great introductory recipe.

Ingredients

    Satay sauce
  • 2/3 cup peanut butter
  • 1 cup coconut milk
  • 2 TB store-bought red curry paste
  • 2 TB sugar
  • 2-4 tsp lemon juice or vinegar
  • Noodle salad
  • 200g vermicelli rice noodles
  • 4 cups shredded vegetables (red cabbage, white cabbage, carrot, capsicum, spring onion, cucumber etc)
  • 1 bunch coriander leaves
  • 2 TB olive oil
  • 800g extra firm tofu cut into 2cm cubes. Replace with 500g chicken/meat if tofu is not your thing.
  • 1/3 cup cashew nuts (optional)

Directions

    Satay sauce
  1. Combine all the satay sauce ingredients in a small saucepan.
  2. Bring to a gentle boil over medium heat and stir until combined and smooth. We want a slightly runny consistency.
  3. Taste and adjust for preference.
  4. Noodle salad
  5. Prepare vermicelli noodles as per packet.
  6. Heat oil in a large fry pan over high heat. Add slices tofu and fry on each side until golden (~5 min each side).
  7. While the pan is still warm toast the cashew nuts on medium heat for ~5 minutes.
  8. Combine noodles, shredded vegetables, coriander leaves and tofu in a large bowl. Add the dressing and mix to combine.
  9. Top with cashew nuts and enjoy!
